• Students in Mrs. Obernesser’s Foods and Nutrition class at Remsen Jr./Sr. High School celebrated the Eat Smart NY March Harvest of the Month by preparing several recipes that feature carrots.

    During the week of March 19, students practiced making Maple-Glazed Carrots and Garlic Herb Roasted Potatoes, Carrots and Green Beans in their class.

    On March 22, the students prepared Carrot Smoothies and held a sampling for students in the cafeteria during lunch.

    All of the recipes gave students the opportunity to practice elements of meal planning and food preparation including cleaning, knife skills, kitchen safety and cooking with a stove or oven.

    The Harvest of the Month lessons highlight the many ways that the featured fruits and vegetables can be prepared and served, as well as their nutritional benefits.
